To celebrate spring’s arrival, we have one of its unique and star vegetables of the season—asparagus! At its best between March and May, asparagus should be available at your local grocery or farmers’ market. Be sure to choose spears with bright green stalks and purple-tinted tips. If you don’t plan to use it within a day or so, you can keep it in the refrigerator in a cup filled with 1 inch of water and standing upright (so the ends are submerged, like flowers in a vase). Asparagus is rich in vitamins such as B6, A, and C. It’s also a wonderful source of fiber, potassium, and folic acid. Preparing it in a skillet or pan at a high heat enables you to cook the asparagus fast to preserve the nutrients and highlight its natural flavor, brought out by a little lemon and olive oil. An easy side dish that pairs well with chicken or seafood, asparagus works especially well with salmon or scallops.
