If you love eggs and aren’t the best at making omelets, or find quiche too cumbersome for a breakfast or brunch treat, let the frittata come to the rescue. Frittatas are a wonderful way to mix protein-rich eggs with whatever healthy toppings you want—simply beat eggs, cook your favorite mix-ins (like mushrooms, garlic, and spinach), maybe add a little cheese (like salty feta), put it all in one pan, cook it in the oven for 15 minutes, and voilà! An elegant breakfast for a party or for those days you’re looking for something special.
