As part of our ayurvedic cooking series, with recipes courtesy of ayurvedic health counselor Debbie Helfeld at Yoga and Practical Ayurveda, we have an easy recipe designed specifically for a kapha diet. Fresh vegetables are an important part of everyone’s diet, providing essential nutrients to support our body, mind, and senses. For kapha dosha, vegetables are a particularly good option due to their tendency to have pungent, bitter, and astringent tastes—all good kapha-pacifying qualities.
Our simple carrot recipe augments these natural qualities by adding wonderful kapha-balancing ingredients such as mint, lemon juice, and black pepper. The addition of pumpkin and sunflower seeds makes for an even more nutritious and tasty recipe. Substitute ghee with sesame oil to turn this into a great vegan side dish—plus sesame oil is also stimulating, which is essential for those with a predominant kaphic dosha.
